♦️THE BASICS FOR SMOKING:
Botanicals or spices:

– Suitable types with a low resin content
– Composition: cellulose, hemicellulose and lignin
– Lignin decomposes at around 300°C
– Aromas released at around 400°C
– Types: apple tree (light and fruity), mesquite (intense and aromatic), hickory (sweet, used on barbecues)
♦️WAYS TO ADD SMOKY FLAVOUR TO A COCKTAIL:

– Process: placement and lighting of moist wood shavings
